Made sweet potato pancakes the other night. Healthier but less tasty, imo. Made another version today for lunch with potato, green apple, and onion. I have been working at making lunches on the cheap that I enjoy. This looks like a sticking habit and costs pennies.

Potatoes. Still amazing. Current favourite way to eat them is with diced and pan-fried with scallions, spinach, Indian spices and a big dollop of homemade raita.
